As guests at the Hotel Maison Arabe for an extended hen weekend, we were fully acquainted with the lush paradise in which the cooking school is situated as it also houses the pool - a peaceful oasis with sun and seamless poolside waiter service. The hotel (in the heart of the Medina) provides a shuttle out to this beautiful facility and boy did we make use of that.
The cooking lesson on the last afternoon was a welcome respite from the sun. A short lecture on Moroccan cuisine followed by much hilarity in the kitchen making a chicken tagine with preserved lemons and olives, a cumin-laced side salad and an orange salad for desert.
While it cooked, the dada (cook) kindly minded our tagines while we returned to the pool for a dip for 40 minutes, returning to the beautiful kitchen (I want one just like that) to plate our food and move outside to the shaded patio area to eat the fruits of our labour.
Not too hard. Good fun. Mohammed who facilitated the event had lovely easy style and it really was the perfect end to a fabulous long weekend.
